A THOUSAND AND ONE NIGHTS IN THE MOUNTAINS

Ingredients
1 kg deer meat (diced)
3 garlic cloves (finely chopped)
1 medium size onion (chopped)
½ can of tomato sauce
1.5 small spoon grounded black pepper
1 small spoon cinnamon
3 spoon parsley (chopped)
500gr okra
salt
1,5 cup extra virgin olive oil
1,5 glass of red wine
1 spoon vinegar

Preparation
– on a big pot, sautee the garlic and onion with 1 cup extra virgin olive oil
– add the meat and let cook in medium heat for 10 min, mixing constantly
– add 1,5 glass of red wine, salt and the spices
– cover the pan and decrease the heat until the lowest intensity and mix every 10 min, checking the sauce and adding some water in case of necessary, also add the tomato sauce
– let cook for 2 hrs approx.
– add the okra, mix and let cook for another 30 min,
– add 1/2 cup of extra virgin olive oil, parsley and let it rest for 30 min.

Okra:
– wash the vegetables, add some vinegar and salt, and let it for 30-35 min
– cut the tips of the ocra taking care of removing only the hard part of it
– on a separate pan, heat olive oil and and cook the ocra for 15 min

Add it to the meat pan and mix well
